How to make it

  • In a nonstick skillet on medium to high heat, heat the oil, crack the egg and add it to the skillet add salt and pepper to taste, cover and cook for about 3 minutes, add the sauce and grated cheese on top and mozzarella (optional), cover and cook for about another 3 to 4 minutes or so.
  • Serve with italian bread or toast.

    Good Idea Don, my mom used to make sauce and poach the eggs in the sauce, and then served it over the pasta. Us kids loved it. Now I make it for my kids..lol...My mom's sauce recipe is in here. If you want the recipe... :)

    Sorry!!! It's tomato sauce...You can use your own sauce or any kind of tomato sauce, marinara sauce will be good too. I use my mom's sauce, When I have left over sauce I make the fried eggs with it. I have a recipe on here for her sauce if you'll like to try it
