Pasta Quattro Formaggio Con Prosciutto E Cavolfiore

- • 300g (about 10.5oz) cheddar cheese, grated. shopping list
- • 300g (about 10.5oz) gruyere cheese, grated; could sub Swiss? shopping list
- • 300g (10.5oz) mozzarella cheese, grated. shopping list
- • 100g (about 3.5oz) parmesan cheese, grated. Don’t know how much of the dried stuff. To taste. shopping list
- • 250g (about 1/2lb) sugar cured ham, diced medium; more or less to taste. shopping list
- • 500g (about a pound) of pasta of choice. I used spirals but elbow would do. shopping list
- • ½ tsp basil, to taste. shopping list
- • ½ tsp cilantro or parsley. shopping list
- • ½ tsp paprika, to taste. shopping list
- • 1/2 stick of butter, divided; ± to taste. shopping list
- • 1/3 cup milk. shopping list
- • 1 large head cauliflower; cut into medium florets. shopping list
- • salt & FG pepper to taste, all around. shopping list
How to make it
- 1. Cook the pasta just less than al dente, it will cook more when baked.
- 2. Drain & rinse the pasta, so it isn’t gluey, and set aside.
- 3. Get a whacking great bowl and mix all the rest of the ingredients, except the cauliflower and half the butter.
- 4. Add the cooled pasta and mix really well. I mean mix REALLY well. Once this goes in the oven the mozzarella cheese will melt & bond, lumps now mean lumps when you serve it.
- 5. Preheat the oven to about 190 deg C (375 F).
- 6. Place the concoction in a suitable casserole dish, cover & place in the oven for 20 minutes.
- 7. Uncover & cook for another 20 minutes. You may have to adjust these times depending on the casserole dish you use and how hot or cold your oven runs. It should be just slightly brown on top and cooked through.
- 8. While the Mac & Cheese is in the oven, lightly steam the cauliflower and add the rest of the butter; keep warm.
- 9. When the Mac & Cheese is ready serve and place some warm, buttered cauliflower florets around the edges.
- I did a nice, simple fresh green salad to go with this and that worked great. Buno Apatite.
