How to make it

  • 1. Cook the pasta just less than al dente, it will cook more when baked.
  • 2. Drain & rinse the pasta, so it isn’t gluey, and set aside.
  • 3. Get a whacking great bowl and mix all the rest of the ingredients, except the cauliflower and half the butter.
  • 4. Add the cooled pasta and mix really well. I mean mix REALLY well. Once this goes in the oven the mozzarella cheese will melt & bond, lumps now mean lumps when you serve it.
  • 5. Preheat the oven to about 190 deg C (375 F).
  • 6. Place the concoction in a suitable casserole dish, cover & place in the oven for 20 minutes.
  • 7. Uncover & cook for another 20 minutes. You may have to adjust these times depending on the casserole dish you use and how hot or cold your oven runs. It should be just slightly brown on top and cooked through.
  • 8. While the Mac & Cheese is in the oven, lightly steam the cauliflower and add the rest of the butter; keep warm.
  • 9. When the Mac & Cheese is ready serve and place some warm, buttered cauliflower florets around the edges.
  • I did a nice, simple fresh green salad to go with this and that worked great. Buno Apatite.

    What, what indeed is one to do with all that cheese other than to make it into some cheesy goodness? I might put a little panko crust on that cauliflower, but well, that's just me and my relationship with cauliflower. Cheers

    Four cheese with ham and cauliflower...huh?...no burden...just brilliant...but then, there is a fine line between brilliants and insanity.
    One would be insane to pass this one up.
