Saucepan Cocoa Cake

- 2 cups all-purpose flour shopping list
- 1 3/4 cups granulated sugar shopping list
- 1 tsp baking soda shopping list
- 1 cup (2 sticks) butter or margarine shopping list
- 1 cup water shopping list
- 1/4 cup cocoa shopping list
- 1/2 cup buttermilk shopping list
- 2 eggs shopping list
- 1 tsp vanilla shopping list
- Frosting: shopping list
- 1/2 cup butter or margarine, softened shopping list
- 4 cups powdered sugar shopping list
- 1 tsp vanilla shopping list
- 3 to 4 tbsp. milk shopping list
- Chopped walnuts or pecans to garnish, optional shopping list
How to make it
- 1. In a bowl, combine the flour, sugar and baking soda.
- 2. In a 2 1/2 quart saucepan, combine the butter, water and cocoa. Bring to a boil. Remove from heat.
- 3. Add to flour mixture, buttermilk, eggs and vanilla.
- 4. With hand mixer, beat 2 minutesat a medium speed.
- 5. Pour into a lightly buttered 13-by-9-inch cake pan.
- 6. Bake at 375F for 25 to 30 minutes or until the cake tests done. Cool.
- 7. To prepare the frosting, in a large bowl, cream butter until light and fluffy. Gradually add the sugar, beating well after each addition. Add vanilla and milk, beating until light.
- 8. Spread frosting over the cake. Garnish with chopped walnuts or pecans , if desired.
