Saucepan Cocoa Cake Recipe

Ingredients
  • 2 cups all-purpose flour
  • 1 3/4 cups granulated sugar
  • 1 tsp baking soda
  • 1 cup (2 sticks) butter or margarine
  • 1 cup water
  • 1/4 cup cocoa
  • 1/2 cup buttermilk
  • 2 eggs
  • 1 tsp vanilla
  • Frosting:
  • 1/2 cup butter or margarine, softened
  • 4 cups powdered sugar
  • 1 tsp vanilla
  • 3 to 4 tbsp. milk
  • Chopped walnuts or pecans to garnish, optional

Directions
  1. 1. In a bowl, combine the flour, sugar and baking soda.
  2. 2. In a 2 1/2 quart saucepan, combine the butter, water and cocoa. Bring to a boil. Remove from heat.
  3. 3. Add to flour mixture, buttermilk, eggs and vanilla.
  4. 4. With hand mixer, beat 2 minutesat a medium speed.
  5. 5. Pour into a lightly buttered 13-by-9-inch cake pan.
  6. 6. Bake at 375F for 25 to 30 minutes or until the cake tests done. Cool.
  7. 7. To prepare the frosting, in a large bowl, cream butter until light and fluffy. Gradually add the sugar, beating well after each addition. Add vanilla and milk, beating until light.
  8. 8. Spread frosting over the cake. Garnish with chopped walnuts or pecans , if desired.
