Greek Style Scampi

- 16 oz linguini shopping list
- 2 teaspoons olive oil shopping list
- 1 green bell pepper, chopped shopping list
- 1 package mushrooms, sliced (I used baby bellas) shopping list
- 3 cloves garlic - minced, pressed or grated shopping list
- 1 28 oz can fire roasted crushed tomatoes with basil, garlic & oregano shopping list
- 2 tblspns cream cheese shopping list
- 1/4 teaspoon black pepper shopping list
- 1/4 teaspoon ground red pepper shopping list
- 1 & 1/2 lbs peeled and deveined medium shrimp shopping list
- about 3 oz crumbled feta cheese shopping list
How to make it
- Cook pasta, drain, drizzle with a bit of oil and toss to prevent sticking and keep warm.
- While pasta is cooking, heat oil in a large nonstick skillet over medium-high heat.
- Add green bell pepper and mushrooms to pan, saute for 2 minutes.
- Reduce heat to medium, add garlic, tomatoes, cream cheese and cook for another 3 minutes.
- Add black pepper (I also added a little Greek seasoning here, but you don't have to) and shrimp. Cook until shrimp are done, stirring occasionally.
- (I reduced the heat enough to have this finish at the same time as the pasta.)
- Stir in the red pepper (I didn't use this). Remove from heat.
- Combine the sauce with cooked pasta and toss evenly.
- Add the feta cheese and stir a bit to incorporate.
- Serve & enjoy!
