How to make it

  • Cook pasta, drain, drizzle with a bit of oil and toss to prevent sticking and keep warm.
  • While pasta is cooking, heat oil in a large nonstick skillet over medium-high heat.
  • Add green bell pepper and mushrooms to pan, saute for 2 minutes.
  • Reduce heat to medium, add garlic, tomatoes, cream cheese and cook for another 3 minutes.
  • Add black pepper (I also added a little Greek seasoning here, but you don't have to) and shrimp. Cook until shrimp are done, stirring occasionally.
  • (I reduced the heat enough to have this finish at the same time as the pasta.)
  • Stir in the red pepper (I didn't use this). Remove from heat.
  • Combine the sauce with cooked pasta and toss evenly.
  • Add the feta cheese and stir a bit to incorporate.
  • Serve & enjoy!
