How to make it

  • Melt butter over medium heat. Add onion, garlic, bay leaf, thyme, salt and pepper. Cover partially and cook, stirring occasionally for 10 minutes. Sprinkle flour evenly over onion mixture and cook, stirring constantly for two minutes without browning. Add 1 cup of the broth and stir until the flour mixture is completely incorporated. Add remaining broth. Add vegetables and bring mixture to a boil. Cover and cook for 30 minutes or until vegetables are very tender. Discard Bay leaf.
  • Puree soup with a stick blender. Stir in cream. Taste and adjust salt and pepper and add the red wine vinegar.

    Celeriac is foreign to me. Is that the same as celery root? The picture is making my tummy growl.

    Nice one honey. I've never tried celeriac before but this gives me a perfect reason to try. Yum....especially that hit of vinegar at the end....I love the punch of vinegar in soups. All of them, much to Fred's chagrin. He does not like vinegar or pickles...can you imagine?
