Carrot And Celeriac Soup

- 2 tbsp. margarine shopping list
- 1 small onion, chopped shopping list
- 1 clove minced garlic shopping list
- 1 bay leaf shopping list
- 1 tbsp. fresh thyme, chopped shopping list
- salt and pepper to taste shopping list
- 4 tsp. flour shopping list
- 4 cups chicken broth shopping list
- 2 cups each chopped carrots and celeriac shopping list
- 1 tsp. red wine vinegar shopping list
- 1 cup Half and Half cream (I've used Evaporated or 2% milk as well) shopping list
How to make it
- Melt butter over medium heat. Add onion, garlic, bay leaf, thyme, salt and pepper. Cover partially and cook, stirring occasionally for 10 minutes. Sprinkle flour evenly over onion mixture and cook, stirring constantly for two minutes without browning. Add 1 cup of the broth and stir until the flour mixture is completely incorporated. Add remaining broth. Add vegetables and bring mixture to a boil. Cover and cook for 30 minutes or until vegetables are very tender. Discard Bay leaf.
- Puree soup with a stick blender. Stir in cream. Taste and adjust salt and pepper and add the red wine vinegar.
