How to make it

  • Cook rotini until firm - do not over cook.
  • Drain and run cold water over noodles while straining until noodles are no longer hot.
  • Put noodles in a covered bowl in refrigerator.
  • Cut up carrots, cucumber, radishes, avacado (optional), and tomatoes in small peices.
  • Add vegies and drained sliced black olives to noodles, stir and add 1 bottle (give or take) of italian dressing.
  • Add salt and pepper to taste.
  • Refrigerate another 15-20 minutes then serve.

    I love this and make it often too...although, mine has only tomato and cucumbers. I like it either hot or cold!
