How to make it

  • Place garlic on cutting board and sprinkle with salt. Using the side of a broad knife, grind salt into garlic until it is ground into a paste. (You can also use a mortar and pestle)
  • Add to chicken, along with other seasonings, and mix well. Shape into small patties, about 3" across, less than 1/2" thick. (They will not shrink much when cooking)
  • Heat oil in skillet over medium high heat. Fry patties, about 3 minutes each side, until golden and cooked through. They are virtually fat free, so don't overcook or they will dry out! Cook just until juices run clear.
  • These freeze and reheat nicely.
