Autumn Apple Bundt Cake

- 2 cups sugar shopping list
- 3 eggs shopping list
- 2 cups vegetable oi8l shopping list
- juice from a fresh large orange shopping list
- 3 cups flour shopping list
- 1 tsp baking soda shopping list
- dash salt shopping list
- 1 Tbs cinnamon shopping list
- 1 tsp vanilla shopping list
- 1/2 tsp nutmeg shopping list
- 3 baking apples, peeled, cored chopped into bite size pieces shopping list
- 1 cup chopped nuts ( walnuts, pecans etc ) may be optional and one may use raisins, currants or dried cranberries instead shopping list
- Glaze: shopping list
- 1 cup powdered sugar shopping list
- 1 tsp orange zest shopping list
- 1/4 tsp orange extract shopping list
- 2- 4 Tbs cream or half and half shopping list
How to make it
- In a bowl beat the sugar, oil, eggs, orange juice, vanilla
- In another bowl combine the dry ingredients.
- Mix together apples and nuts
- Beat wet and dry ingredients together till well blended
- Stir in apples and nuts
- Batter will be thick
- Pour mixture into a well greased and floured bundt pan
- Bake in middle rack in a preheated 325F oven until a wooden toothpick comes out clean in center.
- Baking time will be at least over 60 minutes.
- Cool in pan 15 minutes and carefully turn out to rack to cool completely
- When cool, drizzle on glaze or dust cake with powdered sugar
- Glaze:
- Add enough cream with extract to powdered sugar for a desired glaze consistency.
- Cake freezes very well
