Friday Night Pasta

- small package of spaghetti shopping list
- 1 pint of grape tomatoes( cut in 1/2) shopping list
- 4 cloves of garlic ( chopped fine) shopping list
- 1/4 cup of olive oil shopping list
- 2 large handfuls of spinach shopping list
- 1 tbsp of anchovy paste shopping list
- parmesean to grate shopping list
- parmesean to peel with potato peeler ( yes potato peeler) shopping list
- fresh ground pepper shopping list
How to make it
- Get your pasta water ready and don't forget the salt, cook your pasta firm, drain and set aside.
- Heat a large fry pan with your olive oil on medium heat. add tomatoes and garlic. toss for about 5 minutes( looks like your garlic is boiling )
- turn down the heat to med low
- add anchovy paste and mix well
- add pasta and spinach
- mix in frypan till spinach is wilted
- grate parmesean over pasta (preference) (I like lots)
- I served it with shaved parmesean, fresh chopped parsley
- and fresh ground pepper.
- I also used the potato peeler to make parmesean curls on top
- spinach and leaf salad (can't forget the red onions) mixed with balsamic and olive oil rounded out the meal.
