How to make it

  • Get your pasta water ready and don't forget the salt, cook your pasta firm, drain and set aside.
  • Heat a large fry pan with your olive oil on medium heat. add tomatoes and garlic. toss for about 5 minutes( looks like your garlic is boiling )
  • turn down the heat to med low
  • add anchovy paste and mix well
  • add pasta and spinach
  • mix in frypan till spinach is wilted
  • grate parmesean over pasta (preference) (I like lots)
  • I served it with shaved parmesean, fresh chopped parsley
  • and fresh ground pepper.
  • I also used the potato peeler to make parmesean curls on top
  • spinach and leaf salad (can't forget the red onions) mixed with balsamic and olive oil rounded out the meal.
