Caramel Apple Pizza Recipe
Who would've thunk it? Just me I guess!!!! I did this for a kids' birthday party one year and it was a big hit. It's a great snack too, apples and peanut butter are 2 major food groups...right?!?!

Ingredients
  • 1-20 ounce roll refrigerator sugar cookie dough (lazy man's best friend!)
  • 1/4 cup flour
  • 6 ounces cream cheese, softened
  • 1/3 cup peanut butter (I prefer smooth, but you could use chunky)
  • 1/4 cup brown sugar
  • 3/4 teaspoon vanilla
  • 1 medium or 2 small apples, peeled, cored and thinly sliced
  • lemon juice
  • 1/4 teapoon cinnamon
  • 1/4-1/2 cup caramel ice cream topping
  • 1/2 cup chopped peanuts

Directions
  1. In a large bowl, knead together cookie dough and flour.
  2. Place on a greases pizza pan.
  3. Press from center to edges to make a pizza crust.
  4. Bake at 375 degrees for 12-15 minutes.
  5. Cool.
  6. Topping: while the crust is baking
  7. In a medium bowl,combine cream cheese, peanut butter, brown sugar and vanilla.
  8. Beat with an electric mixer on medium speed until well blended.
  9. Spread onto cool crust.
  10. Brush apple slices with lemon juice.
  11. Arrange apple slices on top of the peanut butter mixture.
  12. Sprinkle with cinnamon.
  13. Drizzle with caramel toppin.
  14. Sprinkle with peanuts.
  15. Cut into wedges and serve.
