Huish Cake

This is a Welsh cake adapted from Julie Duff''s cakes from around the world. It's a light cake which looks like a pound cake and taste like one BUT with a citrus twist. Hard to believe that it has rice flour in it :)
Ingredients
- 1 Cup - Self-Rising flour shopping list
- 1/2 Cup - rice flour shopping list
- 1/2 Cup - Veg' oil shopping list
- 1/2 Cup - sugar shopping list
- 4 - eggs shopping list
- 1 Tbsp - lemon zest, grated shopping list
How to make it
- Preheat oven at 180 degree C and grease a round baking tray. Keep aside
- Mix both the flour in a bowl and keep aside
- Beat oil and sugar till creamy and then add the eggs and whip it up till well combined
- Stir in the lemon zest and transfer the batter into the prepared baking pan
- Bake it for 25-30 minutes or till toothpick inserted in the middle comes out clean
- Let rest for 5 minutes, then transfer to a cooling rack for another minute or so and serve.
