Chicken & Vegetable In Tomato Sauce (Chicken Pochero)

- 1 whole chicken, cut into pieces shopping list
- canola oil, enough amount for frying shopping list
- a handful of baby carrots, split into 2 shopping list
- 2 medium sized potatoes, cut into bite sizes shopping list
- 1 plantain banana, cut into bite sizes shopping list
- 1 Tablespoon minced garlic, shopping list
- 1 medium onion, diced shopping list
- 1 red bell pepper, cubed shopping list
- 1 green bell pepper, cubed shopping list
- a quarter of a cabbage, cut into bite sizes shopping list
- salt to taste shopping list
- black pepper to taste shopping list
- 1/4 to 1/2 cup calamansi or lemon juice shopping list
- 1 small can tomato sauce, shopping list
- 1/2 cup water shopping list
How to make it
- Wash chicken pieces & let drain in a colander. When not dripping with water anymore, marinate with the calamensi or lemon juice in a bowl for at least 30 minutes.
- When ready to cook chicken, heat up cooking oil in a suacepan & fry by batches chicken, carrots, banana & potato pieces lightly. Just until chicken turns opaque in color but not thoroughly cooked. Remove chicken & vegetables from saucepan. From same saucepan, saute garlic, onions & peppers until onions become transparent. Put back into saucepan fried chicken, vegetables, & banana. Add in tomato sauce & water. Let simmer until chicken, vegetables, & banana are thoroughly cooked. Add in cabbage & seasonings. Taste & adjust seasonings according to liking. Cook a little bit more just until cabbage becomes wilted. Best served hot with warm steamed rice.
