How to make it

  • Slice zucchini and tomatoes about 1/4-inch thick. (I had 15 slices of each.)
  • Coat a casserole dish with cooking spray and make a single layer of zucchini and tomatoes, alternating them and overlapping the slices.
  • Spinkle with salt and pepper and the parmesan.
  • Bake at 400 degrees for 30 minutes.
