Applesauce Pound Cake

- cake: shopping list
- 3 1/2 cups flour shopping list
- 1/2 tsp salt shopping list
- 2 tsp cinnamon shopping list
- 1 tsp ground cloves shopping list
- 3 tsp baking soda shopping list
- 1/2 cup butter ( or margarine ) softened at room temperature shopping list
- 2 large eggs shopping list
- 2 cups brown sugar shopping list
- 1/2 cup raisins ( I used some dried blueberries and cranberries) shopping list
- 1/2 cup chopped dates ( I used chopped candied ginger ) shopping list
- 1 cup chopped walnuts ( I used pecans ) shopping list
- 1/2 cup chocolate chips ( my addition ) shopping list
- 3 cups applesauce shopping list
- Brown butter Frosting: shopping list
- 1/2 cup butter ( or margarine ) shopping list
- 1 cup brown sugar( white sugar is fine too ) shopping list
- 1/4 cup milk ( I used half and half cream ) shopping list
- 1 tsp vanilla shopping list
- 2 cups powdered sugar shopping list
How to make it
- Sift the dry ingredients except the sugar
- In separate bowl, combine the dried fruit and nuts
- Cream the butter and sugar till fluffy
- Add and beat in the eggs
- Beat together in additions along with the applesauce the wet and dry ingredients.
- Stir in the fruit and nuts
- Grease and flour a 10 inch tube pan very well
- Pour in the batter and spread in pan evenly
- Bake in a preheated 300F oven about 1 1/2 hours or tested done in center with a toothpick
- Cool cake in pan
- Meanwhile make frosting
- Bring butter in a saucepan over low heat until melted
- Stir in the 1 cup of brown sugar
- Raise heat and bring to a boil for 2 minutes
- Then add milk stir well and return to a boil and remove from heat
- Let cool 5 minutes
- Beat in vanilla and powdered sugar till a frosting consistency
- Spread this over the cooled cake
