Coffee Can Bread Recipe
This really is bread made in a coffee can! Kids will LOVE it. It's awesome for breakfast warmed with some butter.

Ingredients
  • 1 cup graham flour
  • 1 1/2 cups all-purpose flour
  • 1 cup yellow cornmeal
  • 3 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoons salt
  • 1 3/4 cups buttermilk
  • 3/4 cup molasses
  • 1 cup raisins (you can use nuts if you prefer)

Directions
  1. In a large mixing bowl, combine the 2 flours, cornmeal, baking powder,baking soda and salt.
  2. Mix to blend.
  3. In another bowl, mix together buttermilk and molasses.
  4. Add to dry ingredients and mix well.
  5. Stir in raisins and/or nuts.
  6. Pour into 3 WELL-greased 13 ounce coffee cans, filling to leave 2 inches on top.
  7. Cover each can with aluminum foil.
  8. Bake at 350 degrees for 45-60 minutes.
  9. Cool slightly before turning out of cans.
  10. To store, package tightly in plastic wrap.

Ive been making this for years and I love mixing in dried apple pieces and cherry-flavoured craisins in for the raisins!
