Celery Root Butternut Squash Velvet Soup

- 1 big celery root, peeled and cubed shopping list
- 1 onion, peeled and cubed shopping list
- 1 butternut squash, peeled and cubed shopping list
- pinch of salt and pepper shopping list
- 1 tbsp extra virgin olive oil shopping list
How to make it
- Put all the ingredients on a big tall pot.
- Cover with water and bring to a boil.
- Add the olive oil and season with salt and pepper. Let the soup cook until every ingredient is fork tender.
- Puree the soup. Add recently boiled water if you find it too thick.
- Check your seasoning and add more if needed before serving.
