Greek Fish Pie

- 500g good white fish. In NZ snapper or gurnard, but anything nice will work. Chop the fillets into two inch chunks. shopping list
- 1 medium onion or two shallots, roughly chopped. shopping list
- 4 ripe medium tomatoes, deseeded and roughly chopped. shopping list
- Dozen ripe stoned black olives roughly copped (kalamata chilli marinated work, but whatever you can find) shopping list
- 3 cloves fresh garlic, chopped shopping list
- Half a cup fresh parsley, finely chopped shopping list
- 75ml olive oil (rough guess) plus a spray can of good olive oil. shopping list
- 75ml white wine. Make this medium not sweet. shopping list
- 5 slices whole meal bread, crumbed shopping list
- 1 lime,zested and juiced shopping list
- salt and pepper to taste shopping list
How to make it
- Preheat oven to 180centigrade
- Toast breadcrumbs in a shallow tray after spraying them with olive oil. I found this helps make them better with the fish which takes much less time to cook. This will take 20 mins or so. Meanwhile....
- Sautée onions in a little olive oil and add garlic for last minute. Will take only five minutes...then add to next step:
- Mix all other ingredients except fish and put on one side
- Spray a baking dish with olive oil (you can cover it in butter but that is not so healthy!)
- place fish in dish big enough to have fish one layer deep, but no larger
- Cover in other ingredients and add lime juice
- Top with breadcrumb and add lime zest
- Bake for 20-25 minutes
- Serve with a good salad

This is a delicious way to prepare fish. In Portugal we have a famous dish made with salted codfish prepared just like this ;) I actually made it yesterday!
