This is an old amish recipe. I have been making this for year. Recipe calls for 2-8" pies. I make it in one 10" pie.

Ingredients
  • Makes 2-8" pies or 1-10" pie
  • Mix:
  • 1 1/2 cup sugar
  • 2 lemon juiced (roll before juicing) & rind grated
  • add:
  • 3 eggs, beaten
  • slowly add:
  • 1 cup boiling water
  • Pour this into pie shell. Sprinkle on crumb topping

Directions
  1. Crumb topping: work with fingers until fine crumb.
  2. 1 cup sugar
  3. 1 3/4 cup flour
  4. 2 teaspoons baking powder
  5. 3 tablespoons butter
  6. Bake 40 minutes 400 degrees until brown
  7. ***I always cover the pie crust edges with foil and bake with the foil on for most of the time until last 15 minutes. Sometimes it stays on the entire time. I always use foil on my crusts.
