Lemon crumb

- Makes 2-8" pies or 1-10" pie shopping list
- Mix: shopping list
- 1 1/2 cup sugar shopping list
- 2 lemon juiced (roll before juicing) & rind grated shopping list
- add: shopping list
- 3 eggs, beaten shopping list
- slowly add: shopping list
- 1 cup boiling water shopping list
- Pour this into pie shell. Sprinkle on crumb topping shopping list
How to make it
- Crumb topping: work with fingers until fine crumb.
- 1 cup sugar
- 1 3/4 cup flour
- 2 teaspoons baking powder
- 3 tablespoons butter
- Bake 40 minutes 400 degrees until brown
- ***I always cover the pie crust edges with foil and bake with the foil on for most of the time until last 15 minutes. Sometimes it stays on the entire time. I always use foil on my crusts.
