How to make it

  • Cut chicken into small chunks. Cook chicken and onions in a frying pan until chicken is cooked thouroughly. Season with pepper, chili powder and cumin.
  • In a large bowl, mix chopped lettuce, chopped olives, cheeses and enough dressing to coat everything. (approx. 1/4 cup) Do not add too much dressing!
  • Add chicken and onions. (you can chill the chicken first, but it is also fine to add it while it is still warm) Mix thouroughly. Add more dressing if neccessary.
  • Scoop mixture into pita shells and serve.
  • Variations: You can also add chopped tomatoes or cucumbers.

    I just made this for my family and they loved it. Neither one of us has been feeling well so we needed something liter. This was perfect. Great taste not too overwhelming.

    That is one good sounding pita sandwich!!! I bet the warm chicken even melts the cheese....oooey goooey goodness. Thanks for the post!
