A quick meal, when you are in a hurry. My husband and I just threw this together, and it was so very delicious.

Ingredients
  • 2 boneless, skinless chicken breasts
  • 1/2 cup sliced or chopped onions
  • pepper
  • chili powder
  • cumin
  • 1small can chopped black olives
  • 1/2 head iceburg lettuce, chopped (may substitute romaine lettuce)
  • 1/4 C feta cheese
  • 1/4 C shredded mozerella cheese
  • caesar dressing
  • 1 package pita shells

Directions
  1. Cut chicken into small chunks. Cook chicken and onions in a frying pan until chicken is cooked thouroughly. Season with pepper, chili powder and cumin.
  2. In a large bowl, mix chopped lettuce, chopped olives, cheeses and enough dressing to coat everything. (approx. 1/4 cup) Do not add too much dressing!
  3. Add chicken and onions. (you can chill the chicken first, but it is also fine to add it while it is still warm) Mix thouroughly. Add more dressing if neccessary.
  4. Scoop mixture into pita shells and serve.
  5. Variations: You can also add chopped tomatoes or cucumbers.
