How to make it

  • Preheat oven to 400 degrees.
  • Place tomatoes cut side up on a cookie tin or baking sheet sprayed with cooking spray.
  • Salt and pepper them.
  • Place wrapped garlic head on sheet with tomatoes.
  • Roast all for 45 minutes.
  • Remove from oven. Place tomatoes, squeezed out garlic, and the other ingredients into blender. Cover lid with towel since the tomatoes are hot and might spew out. Mine didn't, but better safe than sorry.
  • Pulse on puree until saucy.
  • (I used this sauce to dress rotini pasta, and topped it off with grilled chicken and zucchini cut into strips. Served it on a bed of green and red lettuce leaves. Delicious!!)
