Ingredients
  • 2 cups maple sugar
  • 1 ¼ cups 1/2 & 1/2 cream

Directions
  1. Put the ingredients into a pan and bring to a boil.
  2. Cook until a candy thermometer registers 240F (soft-ball stage).
  3. Remove from heat, allow to cool until the bottom of the pan is lukewarm.
  4. Beat on medium-high speed until it loses it’s shiny appearance.
  5. Pour into a greased pan, cut before it cools completely.
  6. Chill before serving.

Oh, good heavens does this sound good. I think maple is an underutilized flavor and it should make an appearance at the table more often.


"chopped maple sugar"..? what's this and what is 15% cream? Heavy, 1/2 & 1/2 ? I'm looking for a Christmas maple candy to give as gifts, but am not sure what these are.
