How to make it

  • Bring the water to the boil and add the fish sauce, soy sauce, sugar and stock cubes.
  • Taste and add salt - and add more of the stock ingredients to suit your preference.
  • If you are using uncooked chicken, add it now and simmer for 10 mins.
  • Add the veg you have chosen that take the longest to cook.
  • Now add the thinly sliced meats of your choice.
  • When they are almost cooked, add the salad leaves, spinach, etc.
  • Serve in bowls - tradition is that you pop a chicken leg in the bowl jauntily standing up to one side, and eat it with your fingers.
  • Another way to go is to have an indoor/outdoor Thai BBQ. Have a burner on the centre of the table, already having made the stock and bring it to a simmer on the table.
  • Chop all the meats and veg in advance and arrange them in dishes on the table.
  • Cook on the table and encourage your guests to participate.
  • This can be a simple meal - or you can serve it with rice, breads, salsas.
