Chicken Carbonara Pizza

For Chicken
- 1lb boneless chicken tenders shopping list
- 1 large lemon, juiced and zest from about 1/4 of the lemon shopping list
- 1clove garlic, minced shopping list
- plenty of fresh ground pepper shopping list
- kosher or sea salt shopping list
For Rest of Pizza
- 1lb pizza dough, either premade or purchased(should be enough for 2 medium or 1 Xlarge pizza) shopping list
- 8oz cream cheese, softened shopping list
- 4 cloves garlic, minced shopping list
- about 1/2 cup fresh grated parmesan cheese shopping list
- a lil half and half or milk for thinning shopping list
- about 1/2lb bacon cooked crisp and crumbled shopping list
- 8oz fresh mushrooms, sliced shopping list
- 1 large sweet onion cut in half and sliced thin to make "half rings" shopping list
- 8oz Gouda, fontina, Havarti or gruyere cheese, shredded shopping list
How to make it
For Grilled Chicken
- Combine all ingredients and let rest in a zipper bag for about an hour, or up to over night.
- Grill chicken over medium high heat a couple minutes on each side, until cooked through to 165. Set aside, then chop
For Rest of Pizza
- Beat cream cheese until smooth.
- Add garlic, Parmesan and some black pepper and mix to combine.
- Add half and half or milk a lil at a time until mixture is JUST thin enough to spread. Don't make this thin, like a pizza sauce, you want to spread this on more like stiff icing.
- Top with onion and mushroom slices, bacon, chicken pieces, then sprinkle with the shredded cheese. See Photo
- Bake at 425 for about 10 minutes, just until heated through, melted and bubbly.(or, follow package directions if using a packaged pizza crust)
- *this can also be grilled!
