How to make it

  • 1. In a saucepan bring the tangerine juice to a boil on high heat and cook until it has reduced in volume to 1 1/2 cups then lower the heat to medium-low, stir in the milk and heat until it starts to simmer
  • 2. Whilst that is heating in a bowl whisk together the sugar, corn starch, cream cheese, egg yolks (if using) until blended well, and then whilst whisking gradually add two cups of the milk/juice mixture to the sugar mixture until well blended then drizzle this mixture back into the juice/milk in the saucepan, whisking all the time and heat on low for about 5 minutes or until mixture thickens. Remove from hear and stir in the zest.
  • 3. Chill the mixture(if your machine tells you to do that) and then place in your ice cream machine per instructions.
