Cinnamon Cake

- 3 eggs, separated shopping list
- 1 cup light muscovado sugar shopping list
- 1 cup butter shopping list
- 1 cup corn starch shopping list
- 1 cup all-purpose flour shopping list
- 1 cup milk shopping list
- 2 tbsp ground cinnamon shopping list
- 1/2 tbsp baking powder shopping list
Frosting
- 2 cans condensed milk shopping list
- 1 measure of milk (use one of the condensed milk can to measure) shopping list
- 1 tbsp corn starch shopping list
- 1 tsp vanilla essence shopping list
- 1 tsp cinnamon powder shopping list
How to make it
- Whisk the eggs whites until it forms soft picks. Set aside.
- Whisk together sugar, butter and egg yolks. Add corn starch, flour and milk.
- After well combined add cinnamon and baking powder. Gently fold in the egg whites.
- Pour the batter into a lined springform pan.
- Put in the oven for about 30 minutes or until a tooth pick inserted comes out clean.
- Blend all the frosting ingredients and pour them into a sauce pan oven medium heat. DO NOT stop stiring for 15 minutes.
- Let it cool down and then frost the cake. I use to cut the cake horizontally, pour part of the frosting on one part (I eye ball the quantity, use your judgement) and cover with the remaining cake. Then I pour over the remaining frosting and sprinkle with cinnamon powder. Looks pretty ;)
