Ingredients
  • Wildtree Basil Pesto Blend
  • 1 small focaccia loaf
  • 1 jar roasted red bell peppers, cut into strips
  • 1 pound sharp provolone cheese
  • Wildtree Natural Grapeseed Oil
  • 1 lb. boineless shinless chicken breast
  • Wildtree Roasted Garlic Grapeseed Oil

Directions
  1. Prepare Basil pesto Blend according to directions
  2. In a medium skillet, saute chicken breast in 2 T. Roasted Garlic Grapesee Oil.
  3. Cook until chicken is done.
  4. Cut focaccia loaf into 4 pieces, sliced horizontally
  5. Brush with prepared Basil Pesto Blend.
  6. Place chicken, red bell peppers, and provolone cheese onto the sandwich. Place each sandwich onto the grill until the focaccia is toasted and the cheese begins to melt.

Sounds lovely but wat is provolone cheese?


Easy and yummy sounding. My kind of cooking.


There is a little deli where I get the most decadent grilled vegetable paninis. The idea of trying this with a chicken pesto, and most especially with a nice healthy grapeseed oil instead of EVOO sounds absolutely divine. Now if I could just track down a nice recipe to do my own focaccia I'd be in heaven !
