Healthy Shmealthy Lime Ina Coconut Muffins

put the lime in the coconut and mix em both up! this sweet tangy muffin is soo good no one will think its good for you. healthy quick tasty breakfast,
Ingredients
- 1 cup of plain, lime or vanilla yogurt shopping list
- 2/3 cup applesauce shopping list
- 1 egg shopping list
- 2/3 cup coconut or veg oil shopping list
- 1 tsp vanilla shopping list
- 2 limes juiced and zested, discard the rind shopping list
- 2 tsp baking soda shopping list
- 1 tsp sea salt shopping list
- 2/3 cup sugar shopping list
- 2/3 cup coconut shopping list
- 1 cup rolled or steel cut oats shopping list
- 2 cups flour shopping list
- powered sugar for dusting if desired shopping list
How to make it
- mix the wet and then add the dry, mix til just mixed
- bake in a buttered and floured loaf pan or muffin pan at 375 until browned on top and tooth pick is clean, let cool completly and dust with powdered sugar if you want.
