Clubhouse Turkey Sandwiches With Spicy Currant Mustard

- 2lbs smoked or peppered turkey deli meat, sliced to a medium sandwich size shopping list
- 12oz cream cheese, softened shopping list
- about 1/4lb bacon, cooked crisp and crumbled shopping list
- fresh ground pepper shopping list
- 2 tomatoes, sliced shopping list
- 1 onion, sliced very thin(I suggest Vidalia! ;) shopping list
- leaf lettuce shopping list
- Sandwich rolls or buns, sliced shopping list
For Spicy currant Mustard
- 1/4 cup currant preserves(the more "natural", the better. Or, can sub blackberry or black raspberry, if desired) shopping list
- 1/4 cup spicy mustard shopping list
- a few dashes of hot sauce, if desired shopping list
- fresh ground pepper shopping list
How to make it
- In small bowl, combine the cream cheese with the bacon pieces and fresh ground pepper until well combined. Set aside.
- In another small bowl, combine all ingredients for the Currant Mustard and mix well. Set aside.
- Arrange turkey slices on a plate per portion. In other words, if the sammiches you are making would be best with 2 slices, lay them out as you would on the sandwich.
- Scoop a bit of the cream cheese spread on top of the turkey and spread it around a bit.
- Heat a heavy skillet or griddle(I used cast iron) to high heat.
- Spread a layer of the currant mustard over the bottom of each of the split buns/rolls
- Carefully add the topped turkey slices to the hot skillet just to heat them up, slightly.
- Remove them from the skillet and place a bundle on the bottom of each of the rolls.
- Add the sliced onion, tomato and lettuce then put the bun top on!

My kinda sandwich! I don't think I've even ever had currants. I'm sure my store carries the preserves and I really want to make this :)
