Blueberry Mascarpone Cobbler

- 1 1/2 sticks butter shopping list
- 16 oz. marscapone cheese shopping list
- 2 cups sugar shopping list
- 3 eggs shopping list
- 2 tsp vanilla shopping list
- 2 1/2 cups flour shopping list
- 1 tsp baking powder shopping list
- 1 tsp baking soda shopping list
- dash salt shopping list
- 2 cups blueberries shopping list
- 1 cup sliced strawberries shopping list
- Sprinkles of brown sugar, white sugar, some cinnamon shopping list
How to make it
- Cream butter, cheese and sugar well
- Add and blend in eggs and vanilla
- Combine dry ingredients
- Beat into creamed mixture to combine well
- Place batter in a greased and floured oblong baking pan
- My pan was a 9 x 11 oblong pan but a 9 x 13 or 8 x 12 may do as well
- Combine blueberries and strawberries
- Spread over the batter
- Sprinkle berries with some white and brown sugar and cinnamon
- Bakie in a 350F oven middle rack and lower heat last 15 minutes to 325F if browning to fast -also cover with foil
- I took about an hour for my cake to appear set as testing is hard to do with the berries
- Cool 5-10 minutes and invert cake to serving plate
- Serve warm or room temp or even chilled with whipped cream, whipped topping or ice cream
- Either cut pieces or scoop from the pan when warm.
- We thought the best flavor at room temperature
- Note: simply slice off any overly browned ends if needed to
- make cobbler cake look neater
