Simple Spanish Rice

- 1 1/2 cups medium or long grain rice (I used medium) shopping list
- 2 cups of chicken stock shopping list
- 1/2 can of tomato sauce shopping list
- 1 - 10 oz can of regular Rotel tomatoes shopping list
- 1 T olive oil shopping list
- 1 large shallot, chopped shopping list
- 2 cloves garlic, smashed and diced shopping list
- 1/2 tsp black pepper shopping list
- 1 tsp parsley shopping list
How to make it
- In a skillet heat the olive oil
- Add the garlic and shallot, and cook until the shallot is translucent
- Add the rice, and cook for about 3 minutes, allowing the rice to toast and turn slightly brown See Photo
- Add the Rotel, and stir to combine See Photo
- Add the chicken stock, tomato sauce and parsley See Photo
- Bring it to a boil, and then cover and turn the heat down to low for about 20 minutes, stirring occasionally so it doesn't burn on the bottom of the pan
- Garnish with a little parsley and enjoy!
