How to make it

  • In a skillet heat the olive oil
  • Add the garlic and shallot, and cook until the shallot is translucent
  • Add the rice, and cook for about 3 minutes, allowing the rice to toast and turn slightly brown See Photo
  • Add the Rotel, and stir to combine See Photo
  • Add the chicken stock, tomato sauce and parsley See Photo
  • Bring it to a boil, and then cover and turn the heat down to low for about 20 minutes, stirring occasionally so it doesn't burn on the bottom of the pan
  • Garnish with a little parsley and enjoy!

    Red Rice...I like it!
    Cooking the rice before boiling it makes it less sticky
    Rice is like two brothers...close,but not stuck together.
    Your recipe...althou not a complete protein,does make for a spicy side kick.
    Well done.
