Choco-Raspberry Meringue Bars

- 1/2 cup butter or stick margarine, softened shopping list
- 1/2 cup dark brown sugar shopping list
- 2 egg yolks shopping list
- 1/4 teaspoon salt shopping list
- 1 1/2 cups flour shopping list
- 1 cup quick-cooking oatmeal (not instant) shopping list
- 1 cup dark high-quality chocolate chunks shopping list
- 1 1/2 cup all-fruit raspberry jam shopping list
- 4 egg whites shopping list
- 1/3 cup granulated sugar shopping list
- 1/2 cup finely chopped hazelnuts shopping list
- 1/2 cup slivered almonds shopping list
How to make it
- Preheat oven to 350F.
- Cream the butter and brown sugar.
- Add egg yolks and salt. Add flour and oatmeal and knead in.
- Pat batter onto a greased cookie sheet.
- Bake for 15 to 20 minutes until lightly browned.
- Remove from oven.
- While hot, spread with jam and top with chocolate.
- Beat egg whites until soft peaks. Beat in sugar and whip to stiff peaks.
- Fold in nuts.
- Gently spread on top of jam and chocolate.
- Bake 25 minutes.
- Cool completely. Cut into squares or bars.
