Chicken Quesadilla Recipe

Mmmmm...quesadilla. They're great cuz you can mix them up anyway you like!

Ingredients
- 2 flour tortillas
- 2 tbs chipotle sauce
- 1 grilled chicken breast, sliced
- monterey jack and cheddar cheese
- Fillings (all optional):
- diced jalepeno pepper
- diced tomato
- doced onion
- minced cilantro
- crumbled bacon
- bell pepper
- etc, etc!
- on the side:
- sour cream
- salsa
- guacamole
- shredded lettuce
Directions
- Spray one side of tortilla with cooking spray (I like butter flavored) and place sprayed side down on griddle or pan
- spread chipotle sauce on tortilla
- top with chicken, cheese and desired filling
- cover with other tortilla and spray again with cooking spray
- brown evenly on both sides unitl cheese is melted
- serve with desired sides

This is a family favorite. The kids want me to make extra chicken so that there will be left overs. I love to use Cookies BBQ Sauce (Brand-if you haven't tried it -it is great!) w/ the chicken etc. The George Foreman Grill is great with making the quesadillas. Very quick!
