How to make it

  • Pat pork chops dry with paper towel and season with salt and pepper.
  • Heat butter and oil in a heavy skillet and brown the chops for 3-4 minutes on 1 side. Repeat 3-4 mins. on other side.
  • Add chicken stock ,vinegar, and rosemary. Scrape up the cooking juices and cover the pan.
  • Cook over moderate heat for approximately 5 minutes or until sauce is reduced to a glaze and chops are done.
  • Place on heated plates and spoon the glaze over the top.

    I have made this straight down to the half butter and half olive oil, I never measure though and it's usually for 4 even though we are a family of three but my husband eats a lot.
