Sauteed Pork Chops with Vinegar and Rosemary for 2

- 2 loin pork chops (3/4"-1" thick) trimmed of fat shopping list
- coarse salt to taste shopping list
- freshly ground pepper to taste shopping list
- 1 T unsalted butter shopping list
- 1 T olive oil shopping list
- 1/2 cup balsamic vinegar shopping list
- 1/4 cup chicken stock shopping list
- 1 T fresh rosemary leaves shopping list
How to make it
- Pat pork chops dry with paper towel and season with salt and pepper.
- Heat butter and oil in a heavy skillet and brown the chops for 3-4 minutes on 1 side. Repeat 3-4 mins. on other side.
- Add chicken stock ,vinegar, and rosemary. Scrape up the cooking juices and cover the pan.
- Cook over moderate heat for approximately 5 minutes or until sauce is reduced to a glaze and chops are done.
- Place on heated plates and spoon the glaze over the top.

I have made this straight down to the half butter and half olive oil, I never measure though and it's usually for 4 even though we are a family of three but my husband eats a lot.
