How to make it

  • Cut shrimp into bite size pieces and put in individual baking shells. Add a little of the hot white sauce to egg yolks, then add yolks to remaining white sauce, stirring constantly with wire whisk. Add wine, stirring. Pour over shrimp in shells. Add generous pat of garlic butter to each and top with grated cheese. Brown under broiler and serve hot. Garnish with lemon wedges.
  • Serve with a side of cooked white rice.

    Having searched wildly for this book, thinking it was a product of St. Micheals in Maryland, and then finding it's not the Irish spelling, it's the English, that is, St. Michaels, I finally found it. For any one who is interested, it's Southern Accent (no plural S on accent) by the Junior League of Pine Bluff, Arkansas. There recipe is on page 186 an attributed to a Mrs. John Crenshaw. At least in the 1982 edition, I don't know if it's included in those before or after. I presume that's the edition Rottman has, given that his says 1983 written on it. There are a good many copies floating around on Amazon, eBay, etc. Hope that helps!:-)
