Lammas Harvest Holiday Soup Aka, Harvest Pepper Soup

- 2 TB butter shopping list
- 5 skinless chicken breasts diced shopping list
- 2 Med onions diced shopping list
- 10 cups waters shopping list
- ½ cup celery diced (a little more if you like) shopping list
- ½ cup carrots diced (a little more if you like) shopping list
- 1 sweet red pepper diced shopping list
- 1 sweet green pepper diced shopping list
- 1 sweet yellow pepper diced shopping list
- 2 cans sliced potatoes diced (or 2 cups diced potatoes) shopping list
- Fresh cup basil leaf, about 5 in all shopping list
- 8 teaspoons chicken bouillon shopping list
- 2 teaspoons beef bouillon shopping list
- ¼ cup ground sage shopping list
- ½ teaspoon dried basil shopping list
- 2 tablespoons cajun seasoning shopping list
- 1-2 teaspoons garlic shopping list
- 1 teaspoon fresh ground black pepper shopping list
- 3 teaspoons sea salt shopping list
How to make it
- Melt butter and add onions to tender. Add in chicken and sauté until done.
- Poor in water, vegetables and spices.
- Cook for 10 minutes until boiling and turn off heat.
- Allow soup to rest for 1 hour then you may reheat and serve.
- This spicy but not overly hot soup is wonderful with fresh baked wheat bread and salad.
- Healthy, low fat and complete. Enjoy.
