Zucchini Panko Pie

- Base: shopping list
- cooking oil spray- or butter or olive oil shopping list
- 1/2 cup panko breadcrumbs shopping list
- Filling: shopping list
- 4 eggs beaten shopping list
- zest of one lemon shopping list
- 1 Tbs lemon juice shopping list
- 1/4 cup grated cheese ( recipe called for Parmesan I used Asagio ) shopping list
- 1/4 cup panko breakcrumbs shopping list
- 1/2 tsp salt shopping list
- 1/4 tsp pepper shopping list
- 1/2 tsp herbs De Provance (my addition ) shopping list
- 1 medium zucchini grated shopping list
- 2 Tbs grated onion ( my addition ) shopping list
- 1 medium zucchini thinly sliced shopping list
- Topping: shopping list
- 1/2 cup panko breadcrumbs shopping list
- 1/4 cup grated parmesan cheese ( I used Asagio) shopping list
How to make it
- Coat ( or butter my suggestion ) a 9 inch pie pan with cooking spray
- Sprinkle on the breadcrumbs
- Mix the beaten eggs together with lemon zest, lemon juice, salt and pepper, 1/4 cup Panko, 1/4 cup grated cheese and stir to combine
- Now place a thin layer on the sliced zucchini over the breadcrumbs in the pan
- Pour on 1/3 cup of egg zucchini mixture, more sliced zucchini and repeat layers finishing with sliced zucchini on top
- Sprinkle on the Panko and grated cheese as the last topping
- Bake in a preheated 350 F oven about 35 minutes or top is lightly browned
- Cool 10 minutes in the pan,and slice and serve.
- Note: I think a dollop of yogurt or sour cream would be nice.
