Cucumber Lime Salad

this salad was featured at a local farmers market featuring healthy, quick, and tasty recipes. This is indeed simple, quite refreshing and a wonderful salad to have on a hot summers day.
Ingredients
- 2 large garden fresh cucumbers shopping list
- 1 large lime shopping list
- extra virgin olive oil shopping list
- salt and pepper to taste shopping list
- optional: chopped cilantro shopping list
How to make it
- peel cucumber
- Cut in half
- scoop out seeds
- cut into medium size pieces
- Squeeze on the juice of a lime
- Add drizzles of olive oil
- Salt and pepper to taste
- Stir to combine
- Add some chopped cilantro if desired
- Serve at once
- Note: for me, fresh lime, good olive oil, coarse kosher salt and fresh cracked black pepper was perfect for me- although I love cilantro I preferred to leave it out in this recipe.
