How to make it

  • Chocolate Covered Blueberries :
  • Melt chocolate in a glass bowl in the microwave, or in a metal bowl set over a pan of simmering water.
  • Stir frequently until melted and smooth.
  • Remove from the heat, and stir in the butter or shortening or cream until melted.
  • Line a baking sheet with waxed paper.
  • Add blueberries ( you can judge how many will mix in well ) to the chocolate, and stir gently to coat.
  • Spoon small clumps of blueberries onto the waxed paper.
  • Refrigerate until firm, ( about 10 - 15 ) minutes.
  • Carefully lift off paper to serving plate
  • Store in a cool place ( refrigerator ) in an airtight container.
  • Eat within a day or 2 at latest since berries tend to weep through the chocolate over time.
  • Note: recipe may be doubled
  • To make Blueberry Confection:
  • Place blueberries in a single layer in a large slightly oiled square or oblong baking dish.
  • Melt the chocolates together over low heat to melt and blend smooth.
  • Cool slightly.
  • Pour the warm chocolate over the berries.
  • Let chocolate harden in a cool place
  • Chill if needed
  • Carefully break off pieces to serve.
  • Use a good quality chocolate.
  • Store air tight chilled
  • Note: in this recipe there is no cream or shortening/butter included in the recipe
