Quinoa Veggie Skillet

Dressing
- 1 tbsp lemon zest shopping list
- 2 tbsp lemon juice shopping list
- 1 tbsp honey shopping list
- 1 garlic clove, finely miinced shopping list
- 2 tbsp chopped parsley shopping list
- 2 green onions, thinly sliced shopping list
- salt & pepper, to taste shopping list
Skillet
- 1 tbsp olive oil shopping list
- 2 garlic cloves, minced shopping list
- 1 small or 1/2 large zucchini, quartered & sliced shopping list
- 1 1/2 cups sweet corn kernels shopping list
- salt & pepper, to taste shopping list
- 1 1/2 cups cooked quinoa shopping list
- 1/2 cup crumbled feta cheese shopping list
How to make it
Dressing
- Combine all ingredients and set aside.
Skillet
- Heat olive oil over medium heat in a large skillet. Add garlic and cook for 1-2 minutes until fragrant, careful not to burn.
- Add zucchini and cook for 3-4 minutes, stirring occasionally.
- Add corn and cooked quinoa, stir to incorporate. Cook until heated through.
- Pour dressing into skillet and mix to incorporate.
- Serve with crumbled feta over top.
