    I use this recipe all the time. This is a great wheat free mix. I add 1tsp xanthan gum per cup, and use it instead of wheat flour in regular recipes. Usually no one even notices!

    I would increase the liquid, or perhaps in the case of muffins add about 2 tbsp applesauce to keep it moist. I found the dryness in small bakes like muffins a bit more but I forgot about it as I adjusted while cooking.

    Hi there!

    Tried your recipe. Great to have a wheat-free alternative. Just wondering if you found that this substitute absorbs more liquid. I substituted in a muffin recipe and found them to be very dry. If this is the case, would you decrease the flour or increase the liquid?
