How to make it

  • cut goose liver in 1/4 inch slices and sear in hot frying pan on the grill in batches,saving all the fat in the pan...when finished searing let liver rest to get to room temp,approx.1 hour
  • in batches add liver and fat along with all other ingredients into food processor until you have a smooth creamy mousse
  • serve on top of white radish slices,crackers , or just put in bowl surrounded by white radish celery sticks and crackers
