Goose Liver Mousse

- 2 pounds grade ''a'' goose liver shopping list
- 2 oz pistachio's shopping list
- 2 oz shallots diced shopping list
- 2 oz red onion diced shopping list
- 4 oz diced apples ,peeled and soaked in apple brandy(i like granny smith off my tree) shopping list
- 4 oz sweet butter( room temp) shopping list
- 2 oz fresh lemon juice shopping list
- 2 oz season salt shopping list
- 2 oz mixture of green pink and white peppercorn cracked shopping list
- goose fat shopping list
How to make it
- cut goose liver in 1/4 inch slices and sear in hot frying pan on the grill in batches,saving all the fat in the pan...when finished searing let liver rest to get to room temp,approx.1 hour
- in batches add liver and fat along with all other ingredients into food processor until you have a smooth creamy mousse
- serve on top of white radish slices,crackers , or just put in bowl surrounded by white radish celery sticks and crackers
