How to make it

  • Beat eggs and sugar until creamy (4 minutes with my electric hand mixer) Add oil and vanilla. Fold in carrots and mango and applesauce if using. Fold in the dry ingredients until moist and evenly distributed. Transfer to baking pan or cupcake lined pan. I used a 9 inch round cake pan which I greased.
  • Bake cupcakes at 350 for 25 minutes
  • layer cake at 350 for about 40 minutes until golden brown and the toothpick comes out dry.

    Love the combination of mango & carrots, I think a cream cheese frosting would be perfect on these:) Very nice recipe!

    I love mangoes and carrots - great recipe! Sometimes when mangoes are stringy, you can eat and floss at the same time - LOL
