Carrot And Mango Cupcakes

- 2 cups shredded carrots shopping list
- 1/2 cup mango juice ( I used ripe mangos) shopping list
- The Dry Ingredients: shopping list
- 1 1/2 cups flour shopping list
- 1/4 t. baking powder shopping list
- 1/4 t. baking soda shopping list
- 1 t. salt shopping list
- 1 1/2 t. cinnamon shopping list
- 1/2 t. nutmeg shopping list
- Sift the dry ingredients all together to get well distributed shopping list
- 1/2 c. vegetable oil---or 1/2 cup applesauce and 1/4 cup veg. oil shopping list
- 1 teaspoon vanilla shopping list
- 2 eggs shopping list
- 1 1/3 cups sugar (combo of brown and white) shopping list
How to make it
- Beat eggs and sugar until creamy (4 minutes with my electric hand mixer) Add oil and vanilla. Fold in carrots and mango and applesauce if using. Fold in the dry ingredients until moist and evenly distributed. Transfer to baking pan or cupcake lined pan. I used a 9 inch round cake pan which I greased.
- Bake cupcakes at 350 for 25 minutes
- layer cake at 350 for about 40 minutes until golden brown and the toothpick comes out dry.
