How to make it

  • Put the ham bone in a Dutch Oven or soup pot.
  • Add water to cover. Bring to a boil. Reduce heat and simmer 1 hour or longer.
  • Add okra, tomatoes, green bell pepper, and garlic.
  • Melt the butter in a small pan. Add the onions and saute until golden.
  • Add onions to the soup.
  • Simmer until soup is thick, about 2 hours.
  • Remove the ham bone, shred the meat into the soup.
  • Serve over rice in soup bowls.
  • If you can't find decent fresh okra, use frozen and add it to the pot for the last hour, or so, of cooking time. Also, a couple of ham hocks work well. Remove and discard skin/fat/gristle after cooking them, then use the good meaty part.
