Okra Soup

- 1 ham bone with some meat on it. shopping list
- 3 cups okra, sliced thin shopping list
- salt and pepper, to taste shopping list
- 6 large tomatoes, peeled, seeded, and chopped shopping list
- 1/2 cup green bell pepper, diced shopping list
- 1 Tbl. butter shopping list
- 1 small onion, diced shopping list
- 1 Tbl. garlic, minced shopping list
- 1 Tbl. crushed red pepper shopping list
- cooked rice shopping list
How to make it
- Put the ham bone in a Dutch Oven or soup pot.
- Add water to cover. Bring to a boil. Reduce heat and simmer 1 hour or longer.
- Add okra, tomatoes, green bell pepper, and garlic.
- Melt the butter in a small pan. Add the onions and saute until golden.
- Add onions to the soup.
- Simmer until soup is thick, about 2 hours.
- Remove the ham bone, shred the meat into the soup.
- Serve over rice in soup bowls.
- If you can't find decent fresh okra, use frozen and add it to the pot for the last hour, or so, of cooking time. Also, a couple of ham hocks work well. Remove and discard skin/fat/gristle after cooking them, then use the good meaty part.
