- 2 fatty pork chops, deboned shopping list
- 2 lbs. organic chicken thighs shopping list
- 1 shallot, peeled and chopped shopping list
- 3 cloves garlic, peeled shopping list
- 2 tablespoon lemongrass, finely chopped shopping list
- 1/4 cup fresh cilantro shopping list
- 1/4 cup fresh mint shopping list
- fish sauce, soy sauce, organic sugar, to taste shopping list
- I fresh jalapeno, chopped (remove membranes and seeds for less heat if desired) shopping list
- 1/4 cup cornstarch shopping list
- canola oil, for searing shopping list

How to make it
- grind meats using a food processor, transfer to bowl. Add shallot, garlic, lemongrass, jalapeno and herbs to processor and pulse until finely chopped - add to meat mixture. Season meat with soy, fish sauce and sugar and mix in cornstarch. Taste test by cooking a tiny little piece in a saute pan. Adjust seasonings as needed. Place in fridge for at least an hour.
- Divide meat mixture into small patties that will fit with however long you slice your baguettes. Sear patties in a little canola oil over med-high heat, until golden brown on each side, slightly caramelized.
- Assemble with bread and toppings.
