- • 2 large VERY ripe mangos, peeled & seeded. shopping list

- • 4 to 5 scoops of top quality vanilla ice cream. shopping list
- • 2 to 4 Tbs fresh, rich coconut cream (Peepee), optional. shopping list
- • 2 jiggers of over proof rum. I use Bounty 105 proof but that’s from Fiji and you may not be able to get it. The appropriate amount of “rum Essence” may work “. Bundaberg rum from Aussie is great. Been there and shot a game of pool with the owner. Man is serious about rum. That was two days after Goobers in Mundubbera. shopping list

- • 2 slices of pineapple from Dole, chopped. I have never seen a can of Dole pineapple in Samoa. If I don’t have a pineapple in the garden ready to harvest I go to the market and buy one. I whack a bit of that and we’re away. The above is a guess. shopping list

How to make it
- 1. Put this lot in your blender and pulse/blend until TOTALLY homogenised.
- 2. Pour into a suitable serving container.
- 3. Sup and enjoy.
- I sometimes grate a wee tad of nutmeg on this as a garnish, looks pretty and taste nice.
- Be creative; add a fresh strawberry or two, some Kiwi Fruit, guava, etc.
