- Ingredients: shopping list
- 2-3 lbs. of roast or chicken, cut into 2 to 3 inch cubes shopping list
- 2 tbsp bacon grease shopping list

- 1 medium onion, diced shopping list
- 2 jalapenos, stems and seeds removed, diced shopping list
- 2 serrano chiles, stems and seeds removed, diced shopping list
- 1 (14.5 oz) can diced tomatoes shopping list
- 1 tsp chili powder shopping list
- 1 tbsp ground cumin shopping list
- 1/4 tsp cayenne shopping list
- 1/2 cup cilantro, chopped shopping list
- 2 cups dark Mexican beer (Bohemia, Dos Equis Amber or Negro Modelo will work) shopping list
- 2 cups water shopping list
- salt and black pepper to taste shopping list
- juice from one lime shopping list
- 12 corn tortillas shopping list
- 2 tbsp canola oil shopping list
- cooking spray shopping list
How to make it
- Directions:
- In a large pan heat bacon grease to medium heat .
- Brown meat on all sides, about 5 minutes per side (you may have to do this is batches).
- Add the onions, jalapenos, serranos, tomatoes, chili powder, cumin, cilantro, beer, water, salt and pepper.
- Bring this to a boil and then lower temperature to a simmer and cook for about two hours or until meat is tender.
- Remove meat from the pan, shred it and then toss it with the lime juice, a little of the pan juices and salt and black pepper to taste.
- Preheat oven to 350 degrees.
- Spray baking sheet with non-stick cooking spray.
- Heat oil in a small skillet over medium-high heat.
- When hot, fry each tortilla one at a time until soft, about 30 seconds per side.
- Transfer to a plate and use a paper towel to separate each tortilla.
- To assemble, spoon 2 tablespoons of meat mixture into tortilla and roll closed.
- Place on baking sheet. Repeat until all are rolled.
- Bake in oven for 15 -20 minutes or until tips start to brown.
- Remove from oven and sprinkle cheese on top.
- Put oven setting on broil for 2-3 minutes. Remove from oven when cheese is melted.
- Garnish with chopped cilantro, guacamole, diced onions, shredded cheddar cheese, shredded lettuce, salsa and sour cream.
- Serve immediately.
