How to make it

  • Directions:
  • In a large pan heat bacon grease to medium heat .
  • Brown meat on all sides, about 5 minutes per side (you may have to do this is batches).
  • Add the onions, jalapenos, serranos, tomatoes, chili powder, cumin, cilantro, beer, water, salt and pepper.
  • Bring this to a boil and then lower temperature to a simmer and cook for about two hours or until meat is tender.
  • Remove meat from the pan, shred it and then toss it with the lime juice, a little of the pan juices and salt and black pepper to taste.
  • Preheat oven to 350 degrees.
  • Spray baking sheet with non-stick cooking spray.
  • Heat oil in a small skillet over medium-high heat.
  • When hot, fry each tortilla one at a time until soft, about 30 seconds per side.
  • Transfer to a plate and use a paper towel to separate each tortilla.
  • To assemble, spoon 2 tablespoons of meat mixture into tortilla and roll closed.
  • Place on baking sheet. Repeat until all are rolled.
  • Bake in oven for 15 -20 minutes or until tips start to brown.
  • Remove from oven and sprinkle cheese on top.
  • Put oven setting on broil for 2-3 minutes. Remove from oven when cheese is melted.
  • Garnish with chopped cilantro, guacamole, diced onions, shredded cheddar cheese, shredded lettuce, salsa and sour cream.
  • Serve immediately.
