Chicken No-noodle Soup

- 1 to 2 lbs. cooked chicken (I usually use the meat from the chicken I used to make the stock, but if I don't have that, then I saute some chicken breasts in the soup pot.), cut into bite-sized pieces shopping list
- 1 lg. onion (I prefer yellow), cut into large pieces shopping list
- 2 or 3 large carrots, cut into large pieces shopping list
- 2 ribs of celery, also cut into large pieces shopping list
- 2 or 3 cloves of garlic, minced shopping list
- 2 bay leaves shopping list
- 1 tsp. dried thyme shopping list
- 1 Tb. fresh parsley, chopped or 1 tsp. dried shopping list
- 2 bay leaves shopping list
- salt and pepper to taste shopping list
- 4 C. chicken stock shopping list
How to make it
- Place all items in the pot.
- Bring to a boil. Reduce heat and cover.
- Simmer for 45 min. to an hour or until the vegetables are tender.
- Remove bay leaves and serve.
- Note: This is also the same recipe that I use when I make chicken noodle soup, I just add a little more stock for that one.
