California Style Veggie Burgers

- 1/4 sweet carrot finely shredded shopping list
- 1 very small raw white potato peeled and shredded shopping list
- 1/4 cup dried mushrooms finely chopped shopping list
- 1 Tbs minced onion shopping list
- 1 clove garlic minced shopping list
- 1 cup TVP ( textured soy vegetable protein ) granules shopping list
- 1/4 cup thawed frozen green peas shopping list
- 1 Tbs chopped cilantro shopping list
- 1/4 cup flaxseed meal shopping list
- 1 tsp xantham gum shopping list
- boiling water as needed ( start with 1 cup ) shopping list
- salt, pepper to taste shopping list
- coconut or olive oil as needed to cook shopping list
How to make it
- Place all ingredients in a large bowl and mix well.
- Add enough boiling water, adding gradually to wet all well
- Stir very well
- Cover and set aside 5 minutes so everything will absorb water.
- Mixture should not be mushy but soft enough to shape into patties
- Heat some oil ( Tbs or so ) in a non stick pan
- Cook burgers over medium high heat until browned and golden on each side, turning burgers a few times as needed
- Note: burgers will be soft so turn carefully, and they will firm up more with chilling
- Transfer burgers to a plate.
- Let cool and chill overnight
- Then grill burgers to heat them
- Serve on buns with favorite condiments
