Hazelnut Brittle Recipe
This is an awesome brittle. Everytime I make this it goes fast. I have also used this same recipe and substituted slivered almonds and pecans. All are good but my favorite is the hazelnuts. Enjoy

Ingredients
  • 2 cups sugar
  • 3/4 cups light corn syrup
  • 3/4 cup water
  • 1 tablespoon butter
  • 2 cups coarsely chopped hazelnuts
  • 2 teaspoons baking soda
  • 1 tablespoons vanilla extract

Directions
  1. Grease 2 jelly roll pans.
  2. In large heavy saucepan combine sugar, corn syrup, water, butter and nuts.
  3. Stir over medium heat just until sugar is dissolved.
  4. Continue cooking without stirring until mixture becomes amber colored.
  5. Cook stirring to 290 on candy thermometer.
  6. Remove from heat.
  7. Add soda and vanilla stirring slightly.
  8. Pour into prepared pans forming large square of brittle in each pan.
  9. Cool then break into pieces.
