Oven-fried Fish

- 1 pound fish fillets (I used Swai) shopping list
- 1/3 cup stone ground yellow cornmeal shopping list
- 1/4 cup grated parmesan cheese shopping list
- 1 tsp salt shopping list
- 1/4 tsp black pepper shopping list
- 3/4 tsp smoked paprika shopping list
- 3/4 tsp thyme shopping list
- 1/4 tsp celery seed shopping list
- 1/4 tsp onion powder shopping list
- 1/4 tsp garlic powder shopping list
- 1/2 cup milk shopping list
- cooking spray shopping list
How to make it
- Preheat oven to 425F. Line baking sheet with foil and coat with cooking spray.
- In a shallow dish (I used a pie plate), combine cornmeal, cheese, and seasonings. Mix to incorporate.
- Place milk in a large, shallow bowl. Dip each piece of fish in milk, then place in cornmeal mixture and coat thoroughly. Place on prepared baking sheet. Repeat with remaining pieces of fish. Coat tops liberally with cooking spray.
- Bake for 25 minutes, or until fish is easily flaked with a fork.
