How to make it

  • Preheat oven to 425F. Line baking sheet with foil and coat with cooking spray.
  • In a shallow dish (I used a pie plate), combine cornmeal, cheese, and seasonings. Mix to incorporate.
  • Place milk in a large, shallow bowl. Dip each piece of fish in milk, then place in cornmeal mixture and coat thoroughly. Place on prepared baking sheet. Repeat with remaining pieces of fish. Coat tops liberally with cooking spray.
  • Bake for 25 minutes, or until fish is easily flaked with a fork.
